In order to unlock the secret animal you must win the regional championships then when prompted to ride in the forest you'll be transported there.

Enjoy your ride as normal and your Granfather will say that the animal is unlocked and you can choose it instead of the three breeds of horse when you start a new profile. You'll also be able to go straight into the Novice competitions also.
