Complete the game and continue on from the save point. When you enter the World Map, the first EX Stage will appear. To gain access to the others, just complete the one unlocked beforehand.

Any time after you beat the main story line, and have an EX save file, begin a new game and you can load your EX save file, which transfers over money, bestiary, support ranks, level and stats, and skills and skill points.
