Hey guys, sorry if these have been said already!
* There is a shortcut in Koopa Troopa Beach, which puts you about 5 seconds ahead of everyone else. After the first jump, turn right to find a small sand pathway with crabs on it. Avoid the crabs (if you hit them you'll slip like you would on a banana peel) and you'll be ahead of everyone else. 
* There is also a shortcut in DK's level: Jungle Parkway. At the beginning go backwards into the tunnel. Then drive into the section where the wall and ceiling join. If you do it correctly, Lakitu will pick you up out of a black and green pit and put you back in the tunnel right after the bridge. Now cross the finish line, and you'll be on your next lap! This saves tremendous time.
* This is yet another shortcut, but this time for the Royal Castle level. When you get to the booster ramp let it boost you but when you get to the sharp turn right after the booster ramp (make sure you have three boost mushrooms), boost your way to the other section of the road and if it's the last lap you will win the race. 
And I think someone wanted to know the times to beat so the ghosts appeared, so here they are...
Beat Luigi Raceway within 1:52.00 for a ghost to appear. For Mario Raceway you must beat it within 1:30.00. Finally, for Royal Raceway, beat it within 2:40.00. 
And here's one last helpful hint that most of you probably already know. Every time you run over a banana there is sound effect to let you know you hit it, right? Well, to prevent sliding and loosing valuale time, immediatley after the sound effect that lets you know you made contact with the banana sounds, hold down the "B" button for about two seconds. This prevents you from slipping and sliding! A musical note symbol will show if you did it correctly.

Time Trail Strategies
In time trial, if you get a good enough record on Luigi's Raceway, Mario Raceway, and Royal Raceway, you get to vs. a Luigi ghost for Luigi's Raceway, a Mario ghost for Mario's Raceway, and Peach's ghost for Royal Raceway. Nothing happens when you beat these ghosts except knowing that your a super player. Also keep in mind that laying bananas or "? Boxes" just before a ramp, pit, bridge, etc. is a good strategy for making other players fall down and mess up. Also, hiding fake "? Boxes" in real ones is another good strategy. You can also hide bananas in real "? Boxes" too but they don't work as well because they're more visible. Here's a list of all of the short cuts for all of the levels.
Luigi's Raceway: If you have (a) Super Mushroom(s) or a Star, activate it to save time while skidding on the sandy infield or the grassy infield (a single Super Mushroom won't give you enough speed to shortly circulate the entire expanse but it will cut a slice off the corner).
If you jump right under the "? Box" that's right under the hot air balloon you will always get a Spiny Shell.
Moomoo Farm: Drive through the mole sections while taking in caution not to get hit by a mole.
Koopa Troopa Beach: As you drive through this race track, you will notice a ramp that leads to a cave, while using (a) Super Mushroom(s) or a Star, you will successfully go from the ramp into the cave.
If you jump, again while using (a) Super Mushrom(s) or a Star, across the biggest ramp in the race track, which is right behind a large rock, you will soar over the large rock while getting a "? Box," which will always give you a spiny shell.
Also, right after the end of the tunnel shortcut, the tide will sometimes go in a lot, while this tide is going in and while using (a) Super Mushroom(s) or a Star, you can cut across this sand that's temporarily not covered by the tide to save more time.
Also, right by the the beginning of the tunnel shortcut, there's a sand bar shortcut, just remember to watch out for all of the crabs that are around this shortcut.
Kalimari Desert: While using a Star on laps one and two, turn left at the second train crossing and follow the tracks. Just before you enter the tunnel, activate the Star, you'll advance to the next lap. When you emerge, turn left and get back on the rack. However, on the third lap, you have to go back to the regular road and then go through the finish line in order to finish the race or time trail.
Toad's Turnpike: Use a Star to go through the vehicles to save time.
Frappe Snowland: After you pass the snowmen and turn left, you'll see a hill right in front of you. While using (a) Super Mushroom(s) or a Star (a single Super Mushroom might not do the trick) you can plow over the hill and land back onto the track below. Don't go too far, you might end up out of bounds. The hill is just before the bridge that leads to the finish line. You can think of it as a tunnel without the top.
Choco Mountain: Skin the corners sharply while watching out for the falling rocks and making sure that you don't fall off the tracks.
Mario Raceway: This is the best but hardest secret in the entire game. It's called "The Legendary Jump." (Caution: Only experienced drivers will be able to perform this short cut). Just before you reach the highest point on the hill, turn right, towards the wall below, and use (a) Super Mushroom(s) or a Star. Make sure that your at a right angle towards the wall and just just before you soar off of the track. If you did it right, you should fly over the wall.
Use (a) Super Mushroom(s) or a Star to cut across the grass just before the green tunnel.
Wario Stadium: Angle a skid at any of the four small hills at the very beginning of the race track so that you're at a right angle to the wall when you get to the very top. Then, activate (a) Super Mushroom(s) or a Star and jump just before your about to hit the wall and your soar over the wall.
Sherbert Island: Jump over the small V-shaped grooves in the race track.
Royal Raceway: Skid into the booster arrow at the top of the biggest ramp in the entire game and turn as far left as you can while you go over the jump. If you hit the shoreline on the other side of the lake, Lakitu will pick you back up and put you back on the track in the vicinity of the S-curve.
Bowser's Castle: At the very beginning, while using (a) Super Mushroom(s) or a Star, you can cut through the grass where there's a statue of a Bowser that breath's out fire. Skid through the entire area where all of the bushes are, which is right after the stair going down in the tiled room right after the bridge going over the pit of lava. Right after the area where all of the bushes are, skid across the ramp that makes a very tight curve that goes up.
D.K.'s Jungle Parkway: While using (a) Super Mushroom(s) or a Star, you can cut across the corner of grass right after the second biggest ramp in the entire game. Using (a) Super Mushroom(s) or a Star will help you avoid most of the coconut that come out of no where and smash into your kart.
The major shortcut is right at the beginning of the race. First, go backwards into the tunnel that's behind you, then drive into the section where the ceiling and the wall are linked together. You will fall into an odd pool of water and after Lakitu picks you back up from the water, he'll bring you back up and put you back in the tunnel, right after the bridge. Now go through the finish line and you'll find yourself already on the second lap.
If you become small, you can land on the island of grass when you go over the big jump. It's not a secret but it's a cool thing to do.
If you use (a) Super Mushroom(s) or a Star on the hill just above the bridge, you will soar across part of the bridge. It's not much of a short cut at all though.
While using (a) Super Mushroom(s) or a Star on the lower portion of the road in the cave just before the finish line, you can boost your way up the slope where the higher portion of the road is on.
Yoshi Valley: You can cut across the grass that's just to the left of the starting line while using (a) Super Mushroom(s) or a Star.
Go to the wider road (not the narrower road) when you just enter the maze, then turn left, that's the shortest way to get out of the maze.
While passing the end of the guardrail to the right, regular skid (not a power skid) in a wide arc from the right side of the track to the left. Do two or three hops as you skid and jump just before you drop off the track to leap across the chasm.
Banshee Boardwalk: Enter into the room where all the bats come darting out towards you (note: a lot of skidding is required in this room). Just as you enter into this room, skid or hop while you move through the opening of the wall to the right, then jump across the part of the hole that reaches most to the right. When you land, skid immediately around the opening of the next wall (which is to the left), and then skid around the opening of the next (which is to the right) before finally exiting the room.
Rainbow Road: At the starting line, zoom to the right, at the second yellow tile, start moving to the left, as you start moving down the steep hill, you'll be aimed half toward the rail. On the third yellow tile, jump the fence while using (a) Super Mushroom(s) or a Star. If you did it right, you should land on the far away road below you.
Also, use (a) Super Mushroom(s) or a Star while going over steep slopes in the road.

Its like a shorcut, mine is when you are near the high cliff in Wario Stadium, put Bananas or try to crush your oponents! Then they will fall down, its cool! You can win a lot of time!

on wario stadium, after the big jump you can use a boost and jump over the red and white wall and land infront of the finish line

in dks jungle when you are in the cave turn around and fall in the water when you come back up you will be coming first with only on lap to go!

If you hit a banana peel and don't immediately spin out, you just swerve a little, quickly press B to save yourself. If it works, you'll see a little speech bubble with a music note in it.
