You have completed the story.
So, there are no missions anymore that tells the story further.
The Endless Summer chapter gives you the time to do all of the tasks and races and even classes among some other stuff that you didn't finished before.
So if you want to complete the game for 100%, then the Endless Summer chapter gives ya that chance.

Yes. Accually there are more missions. There are some missions that dont really have anything to do with the story. For example "Smash it up". I did that one in endless summer. Also the mission "Painty Raid". That one can be done in endless summer too. Basiclly the missions where there is no + or - respect for any faction.

That and challenges like nerd or greasers challenge. by passing that challenges you can win clubhouses in which you can save your progress and sleep ect. ect.
