You can replace Security for something else.
At level 10, you can do the Nocturnal Shrine quest and the reward is a lockpick which is an unbreakable lockpick. Your Security level will be pointless since you have unlimited tries at it. | |

I think a Kajhit is a better choice.
Free casting of Night Eye helps a lot of sneaking. And Eye of Fear is useful for getting rid of that one pesky person who compromises your mission. | |

If you want.
With high Sneak, you Blade/Hand to Hand/Blunt will do 6x damage on an enemy that doesn't know you are there. Bows only do 3x damage. | |
