Questions regarding the plot (please read)

I want to make sure I understand the plot in several steps:

1. The Las Plagas were buried under the castle that Ramon Salazar live in.
2. Osmund Saddler convinced him to unleash the Las Plagas
3. When the villagers (Ganados) were digging them out, the Plagas went into their body, thus controlling them.
4. Saddler was able to find a way to put the Plagas in egg form and inject whoever he felt the need to.
5. Jack Krauser was used by Saddler to kidnap Ashley.
6. Ashley was infected with Las Plagas and was going to be returned to her father, the US President, who would in turn be infected with the parasite and Saddler would be able to control him, and eventually the world.

Now what I want to know is:

Why do the villagers attack Leon? Is it just because he is an outsider or they just attack on instinct?

The parasites in the bodies of Bitores Mendez, Ramon Salazar and Osmund Saddler are superior than the ones inside the Ganados and Illuminados? Which means in turn the parasites control them and Saddler controls the parasites?

Why did Krauser turn his back on Leon exactly? I know he secretly works for Albert Wesker.

What did Albert Wesker plan to do with the Las Plagas sample when he wanted Ada to retrieve it?

These are just my guesses. I've got the game for Wii, but I haven't beat it in like a year so:

1. The villagers attack Leon because he is trying to retrieve Ashley. They are under Saddler's command, and he wants Ashley returned to the united states infected so she can infect everyone else.

2. The parasites may be superior, or it may be the finished 'product'. All the villagers could be infected with a 'test parasite' and they saw how they reacted, so they wanted a better one for themselves.

3. This will be explained in 'Resident Evil: The Darkside Chronicles'

4. Hard to say. In Resident Evil 5 (SPOILERS

Wesker has unleashed a new infection and Chris states that the 'People are acting like the Ganado detailed in the Leon Kennedy report' so it's likely he has taken it and modified it a bit, but kept it the same since the infected act the same)

Here is another question I neglected to mention:

Was Bitores Mendez just like the villagers? What I mean is, was he at first just an innocent victim who accidentally inhaled the Las Plagas?

I've done a bit of research, and it appears I was incorrect about a few things.

From The Resident Evil Wiki, regarding the villagers, Los Illuminados, and Los Plagas -

Los Illuminados (From Spanish meaning "The Enlightened Ones") was a cult operating in an unknown rural region in Spain.

It was created some time around the 1700s where they worshipped "Las Plagas" (Spanish: "The Plagues"), a parasitic organism with the ability to control its hosts.

The 1st Castellan of the region outlawed the cult and had the Plagas sealed in a cave system beneath his castle. Eventually under the rule of the 8th Castellan, the Los Illuminados now under the rule of Osmund Saddler, were allowed to mine the area, for that was how salazar felt he should atone for the sins of his ancestors, who sealed Las Plagas from the Los Illuminados,[1] effectively occupying his castle which acted as a base for the cult under Saddler.

When Ramon Salazar released the Plagas seal no one thought they could bring them back to life. However Plaga remains were found to be fossilized. (suggesting they could be millions of years old) Although they appeared fossilized, they were able to survive the long years by lying in a dormant state at the cellular level remaining in a spore-like form. These were found to be what first infected the miners, becoming full fledged Plagas after many years of development. Likely using these first Plagas, Saddler perfected the ability to reproduce the organism and took to implanting Plagas eggs into new hosts.

The entire Los Illuminados were soon implanted with Plagas along with much of the local population who had joined the cult. Saddler himself was implanted with a Master Plaga and as such has direct control over the others using lieutenants with similarly augmented Plagas to monitor and direct the Ganados on the ground. Any who resisted the Plagas were executed or used as research in the cult's genetic manipulation experiments.

The villagers then returned to life as normal as they could, farming, attending cult services at the local church, acting as guards for Salazar's castle or working the mines while the cult zealots engaged in dark rituals and sacrifices in the name of Saddler.

Eventually, American agent Jack Krauser, while secretly working for Albert Wesker arrived at the village in search of the parasite. He was later used to kidnap Ashley Graham, daughter of US President Graham as part of an Illuminados plot to do no less than take over the entire world by infecting Graham and returning her to her father in order to infect the United States executive. Plan B was to use Saddler's paramilitary militia to infiltrate the United States and sow discord from within, likely gaining converts to Los Illuminados as they went.

Los Illuminados is believed to be destroyed with the death of Saddler and the Master Plaga.
Regarding Mendez -

It is unclear if this level of assimilation would eventually be demonstrated by all those infected by Las Plagas, or if Mendez was subject of experimentation like many of the game's monsters.
So, basically that's saying it's unclear whether Bitores was infected with a superior parasite, or simply under the effect of Los Plagas. It's likely his type of the virus was tampered with, though, to turn him into the moster.
