I think you're able to choose the cab of an 18 wheeler for Take a Ride if you complete the game. Also if you kill the 10 Timmies in Miami they will chase you down in 18 wheelers.

Yes. You can choose the 18-wheeler in the car select option. And to connect the rig with the truck you need to back the trucks clip straight under the rig and into the stands to make it grab on.
