The easiest boss by far was Chill Penguin, even right after you didnt have the leg parts he would be really easy.

Another easy boss is Flame Mammoth if you have the dash upgrade. All you gotta do is use storm tornado on him.

Boomer Kuwanger is one of the easiest bosses if you have the homing missles from Launch Octopus
