Is that true? Have you found it particularly difficult? And how about One-Man-Army are these time challenges, how hard are they?
Honestly I hate time challenges, especially arbitrary ones I mean what is the real rush? but I did them on Rogue Squadron for the PC, I think that is a perfect example... but honestly they probably put more testing into theirs, that I say of course without playing the full Iron Man yet.
It could be true that the game maybe is a little short so they up the difficulty to extend playing time. I hope not but I could see that happening.

the gameplay is a bit wonky, but Sega isnt known for making games with awesomely tight controls.
and besides, if you went into the demo thinking it would be as awesome as the movie, you are a complete moron. game to movie adaptations are never that great. i went into it knowing that and expecting utter shit. i was surprised to find myself actually enjoying it for the most part.
i cant say for the actual game itself, but besides the expectedly-loose and screwy controls, i actually found the demo to be pretty fun.
