what is the chance of getting each of the items? does it have to do with the items bar when selecting a kart?

i usually thought it was what place you are in a race, if you are in first place you get something useless like a banana peal, or if you are in last a lightning bolt.

umm, not sure.. sometimes it varies in what place ur in.
I usually get bananas (and maybe green shells) 1st place, and bullet bills, ligthening etc in 8th place. Blue shell (bomb) in 5th maybe 4th place

Yes. The higher the items bar the better chance you'll get say triple shrooms when applicable.
No one really pays any attention to that in-game, so as far as I know it's not been calculated. You'd have to calculate it for each place though, and that would take ages.
