Jinpachi's very cheap (teleportation, stunning, throwing flames and sucking out HP? Wow XD) but not that hard to beat (even in hard mode) once you know how to fight him. I don't know about others characters, but just like everybody when controlled by the PS2, he reacts very bad to Asuka's unblockable hit (forward+X), even in Ultra Hard mode, so he can be defeated very easily that way with Asuka. I can even perfect the hell out of him XD
Hardest playable characters to beat would be (in Tekken 5) Nina (even though I almost always play with her, I'm like "DARN IT!" everytime I make a survival and have to fight her), Anna, Xiaoyu on the higher levels. Paul gives me troubles too, not because he's so good but because he's damn cheap (at least he is when controlled by the PS2). Devil Jin can perfect me very fast on high levels if I let him go too much, I think he's a bit overpowered actually XD stupid devil gene!
In Tekken 4 I remember cursing everytime I had to fight Law because he would just spam his backflip and KO me with this very cheap trick XD but in Tekken 5 he's ok, the PS2 found out how to make him do something else XD back there Heihachi was a real challenge but now I kick his butt anytime ^^
