I always found the wyvern to be the best in any situation, whether its top speed through a dogfight, top speed through a bombing run, or top speed through an arch on a street leading to Gaiuss tower. It has the best handling, great speed, and is just generally reliable in every stat.well i guess there are different planes for different situations (try operation x on ace difficulty with an a10). and then there are the special weapons which you have on one aircraft, but not on others (like your favorite aircraft). there are at least two hidden specs that arent shown for aircraft selection as well. the two that i know of (not sure if there are more or not) are acceleration, and stall speed/weight. acceleration speaks for itself, being how quickly you gain and lose speed, and weight/stall speed being at what speed you are at when the aircraft will start to stall.
while im on that note, if you are doing the mission A Diversion, its best to use the Falken or the Cariburn, but have it completely weight trimmed, no matter how low the specs go (especially defense for the cariburn). this way, you wont have to do a patrol pattern around the helicopters. instead, travel right at the stall speed, and you will (only just) maintain formation with the helis. this way, youd be able to get through the level without losing a single heli.
