OK, so you are telling me that I can't leave my *bleep*ing computer for up to 3 days until this old guy comes to visit me? I am atleast 1000m from the closest NPC. and I have to wait for THREE DAYS? can someone give me any kind of tip to get that guy to come?

you can leave your game any time the oldman will visit you with in those three days but you must not be in any major city like coronet-corellia, theed-naboo, you will have a better chance of meeting the oldman if you travel to player city's that were formed by guilds, also if you are currently in combat or doing missions the oldman wont come. Once I landed in a player city it was about 10 minutes then the oldman came but he came to me and when I tried to converse with him he turned and walked away so I just logged out real fast and logged back in then he came again in 5 minutes gave me the crystal and and he left, then about 10 minutes later the sith cought up with me I killed then (novice pistoleer) easy to kill.

The old man is probably way before your swg gaming time.
He was the npc which set you on your path to become a Jedi! (a bloody long journey it took too)
He was in pre cu and i think cu too. But in NGE they cut him out because they made jedi a starting class.

The old man was there before CU occured. I met him about a month before CU went into effect. That was when SOE tried the whole skill point shuffling thing, which made it so I became very skilled in Jedi very quickly because I could just trade in crummy SP for expensive Jedi ones.

If you sat at your computer for 3 days straight, you probably wouldn't meet him since as others have said, he usually appeared when you logged in or ported to an area.
